I don't need to cook ALL day to cook for a week ...


Three chicken breasts ($2.76):
One for Mil's mid evening treat ... she won't even eat an entire breast but prefers unseasoned
One for me ... barbecued w/sprigs of rosemary
One for me ... roasted w/sprigs of thyme/cloves of garlic/slices of lemon

boiled small organic yams

Chicken breasts are fried to crispen skin/flavor then roasted for about 45 minutes.
Important NOT to overcook as some of this gets reheated in the week and is quite juicy!
The yams boiled just til tender so they can either be reheated, fried or even eaten cold...they're so yummy and sweet.
The chicken breast with the garlic is quite large and will provide two meals for me. This one is quite nice with sauteed mushrooms and all are eaten with something green and fresh.
(Some of these cooking shows are so full of it!)

A taste for steak or is it a taste for horseradish sauce?!
Dipping these pan roasted fingerlings into ketchup at meal's
end was like dessert ... so was the horsey-sauce

Did I make this?

Out come the Chinese dishes for Chinese take-away

No...well just the green parts! My favorite Chinese/American take-away
food combination and enough for two meals. The addition of fresh
veggies, melon just seems to round it all out.

Summer Favorites ...

I'm addicted to crispy fried chicken legs,
new potatoes w/lemon zest & juice, olive oil, green onion
Warm or room temp. with fresh tomatoes!

Fresh sweet cherry tomatoes seasoned just like a salad and
mixed with hot fini linquine. Another dish hot or room
temp.! and this with the addition of toasted seasoned
bread crumbs which makes this a little less runny and
a little nutty in flavor.
This is also quite good with cherry tomatoes halved and
sauteed in olive oil...herbs, garlic of course.
No cheese necessary!

Baked Calmyrna figs ...

(2nd box of these and now using puff pastry...fresh cream)

It's the season and I could not pass up the crate of figs at the grocery.
Tonight...two whole figs, prepared pastry, sweet butter, honey, cinnamon, sugar
with a dollop of mascarpone.

Gazpacho ...

How pretty this is and the tomatoes have not been chopped yet

A combination of Laura Calder's totally pureed cold tomato soup which also
included a little bit of bread crumbs and freshly made buttered croutons
and
a gazpacho recipe that appealed to me with some bits to chew.
This along with a bit of cold chicken was a very pleasant dinner and will provide
an anticipated lunch for tomorrow.

Stuffed Peppers~~Roasted Potatoes in Tomato Sauce


A favorite winter time dish, but the local church thrift
sent me off with a bag or two of free! fresh produce.
Stuffed peppers called out to me and I made good use
of that hot oven by also baking a loaf of dark fruit & nutty
brown bread.
A week of food !

Dinner...the plan is ...


Seared Thickly Sliced (2) Beef Tenderloin
Sauteed Fingerlings w/onion, peppers, grape tomatoes
(1) Corn on the Cob (buttered of course;-)

ok...found fennel in the fridge--sauteed that too along with
green onions and everything else I mentioned.
Ate one tenderloin which I shared with Mildred and so enough
food for at least one other meal if not two!
(Had two ears of corn...sweet bicolor Ohio corn, the best!)


been awhile...not since I've eaten but ... !

Since I've just gotten this blog and the others hooked into Facebook (I think!), I will try better to posting here seeing that I DO eat daily...sometimes several times daily!

I just might also include other foods that I love...cooked or uncooked outside of the dinner menu.

So involved with other things today (a new collage) that I quite forgot to bake the cranberry/walnut/oatmeal cookies I was thinking about last night and have also eaten very little today other than a strawberry/yogurt smoothie. Dinner is UP !!!
